Recognized for their commitment to showcasing culture through regional cuisine, Bombay Mustard presents Unsavored Punjab, a food festival from January 23rd to January 27and, 2019. Taking their pledge to the next level, the folks at Mustard Mumbai have chosen the flavors of Punjab for their next pop-up to recreate the feeling of being at home and offer healthy cuisine, which makes integral part of Punjabi philosophy. Food isn’t just food in Punjab, it’s an unparalleled reflection of the history, culture and way of life of a rugged land with an agrarian heritage dating back to the River Valley Civilization. ‘Indus. Naturally inherited from fertile fields, the culinary traditions of the Pays des Cinq Rivières are simple, healthy and linked to the land.

What to expect

The menu was hand-crafted by two very diverse culinary professionals – home chef and food expert Sherry Malhotra and Amritsar’s iconic Bittu Meatwala.

Shimla girl Sherry, an expert in Himachali and United Punjabi cuisine, discovered her love for food at the age of thirteen, learning the tricks early on in her grandmother’s kitchen. A pop-up specialist, she excels in organizing in-home dining experiences and, as Director of Guest Relations at Indian Food Trails, grooms regional in-home chefs for similar roles.

Compliment her simple dishes are the street stars of the culinary capital of Punjab. Amritsari kulche-chhole sits alongside the now legendary fish and goat specialties that the late Davinder Singh Bittu passed down to his two sons. Quickly becoming food festival regulars, ABC and Tarunpreet Singh continue to advance their NWFP legacy with great aplomb in Amritsar and beyond.

The menu is a profusion of sensual delights, tastes, textures, sensations and aromas, some familiar, some less so, all promising indelible images and lingering nostalgia after your visit. A fine balance of simple yet sumptuous delicacies, reminiscent of tribal traditions, smoky hearths and curbside treats.

With this edition of their Unsavoured pop-ups, Mustard restaurants celebrate the fiery and gluttonous Punjab, where an unwavering affection for saag and kukkad goes hand in hand with love for desi ghee.
