Head of Adrian College, general manager of food services to prepare dinner, cocktail

ADRIAN – The Executive Chef and General Manager of Food Services at Adrian College will demonstrate how to prepare dinner and cocktails in an online version of the college’s community speaking series.

Chef Andrew Johns of Sodexo, an international food service and facilities management company, will show viewers how to prepare a salmon entree with a citrus white butter sauce. Side dishes include wild rice pilaf and baby carrots.

Sodexo’s Managing Director at Adrian College, Nick Moorehead, will show viewers how to make a Sidecar cocktail, traditionally made from cognac, orange liqueur and lemon juice. Moorehead will add a touch of simple rosemary syrup to their Sidecar recipe.

The event, which AC calls The Bulldog Bistro, is part of its Bob and Jean Lok Freligh community talk series, according to a press release. It will be presented as a video online, starting at 7 p.m. on Thursday, March 18. To participate in the Bulldog Bistro presentation, go online at adrian.edu/live and click on the pre-recorded event.

Adrian College President Jeffrey Docking will join Johns as a special guest “sous chef”.

“We’re delighted to bring everyone together without actually getting together for this cooking demo,” Docking said in the statement. “We thought, what can we do this year that brings everyone together, to have something fun that reminds them of Adrian College?” We thought, what better way to do it than with food? “

Johns said almost anyone will be able to follow their directions for preparing the meal.

“Whether you are new to cooking or an accomplished cook looking for inspiration, this will be for you! he said in the statement.

Johns studied at the Culinary Institute of America in New York City, worked as a sous chef for Rose and Thistle in Perrysburg, Ohio, and served as General Manager and Director of Food Services for the Jefferson School District through Sodexo.

Johns became the Executive Chef of Adrian College Campus in August 2019. Since then he has cooked thousands of meals on Ritchie Marketplace, including recipes for holidays and special occasions.

The Freligh Community Lecture Series honors Bob Freligh and his late wife Jean, longtime supporters and friends of Adrian College. An anonymous donation to honor the Frelighs was made in 2013 and has brought many nationally and internationally renowned speakers to Adrian College.
